New cut sheet options have been added to best meet your needs. We have streamlined submissions for simple orders, but still offer all of the same great options that we used to. Butcher Basic
This is the most cost effective option we offer at This Old Farm Inc. while maintaining our premium processes such as 100% traceability and vacuum packaging of your product.
Some products included in this package are premium cuts such as the Tenderloin, Boneless Chops, and Baby Back Ribs. With this being the most cost effective option, your invoice will only consist of our standard flat fees and basic processing and slaughter charges. In order to keep this option cost effective, it does not contain any further processed items (no smoked ham or bacon and no seasoned sausage).
Choose this option if you are getting a half hog OR:
- Don’t want to spend time filling out instructions and making decisions. Our butchers already have a set of recommended selections picked for you!
- Want the lowest cost option. There are ZERO EXTRA FEES. Still subject to late, additional slaughter needs, and heavy beef fees.
- Want to minimize the wait time for your order. Our butchers know the basics by heart and can process these orders in their sleep, and no smoked product means you don’t have to wait for it to be smoked and sliced!

Basic w/ Addons
This option is the step up from our Butcher Basic! Choose this option for access to a selection of addons to modify the Butcher Basic.
For additional fees, you will be able to request premium value-added items such as patties, tenderized loins (think county fairs!), bone-in chops, and more seasoning choices. This option allows a bit more customization access than the Peoples Choice. Some options include smoking both your ham and bacon or trying out our other seasonings for your ground pork.
Choose this option if you:
- Have a slightly bigger budget and want value-added items in your order such as quarter pound pork patties.
- Want to try out our smoked ham combo.
- Need more spice in your life and want one of our other seasoning options such as sweet and sassy sage, italian (in hot or mild), or jalapeno.
Peoples Choice
This option is for those that want to spend a little extra for bacon and some sausage! This is our recommended selection for the average pork consumer.
This option has the same selections as our Butcher Basic, except your ground pork will be made into our Farmer’s Mild Breakfast sausage and your pork belly (also called the fresh side) will be turned into delicious smoked bacon. Just add eggs and you have a perfect breakfast combo!
Please Note: if your hog is under 200lbs live weight, your belly will be small! It may be left as a whole slab of bacon due to size and to make sure you get all of your product back, but it will still taste great!
Choose this option if you are getting a half hog OR:
- Want our premium bacon and delicious sausage, both made with clean-label ingredients.
- Don’t want to spend time filling out instructions. Like our Butcher Basic package, no decision making is needed, you just need to know you want bacon and breakfast sausage!
- Don’t mind waiting a few weeks for your perfectly smoked bacon to be ready for pickup.

Wholesale Custom
This option is intended for farmers, retailers or wholesalers that will be selling by the case or by the cut.
For those that want access to the entire TOFI arsenal! For an additional flat fee and fees per item selected, you will have access to all services available here at This Old Farm Inc.
This includes, but is not limited to, ready-to-eat products such as bologna and salami, specialty cuts such as St. Louis style spareribs and country ribs, and premium quality services such as specialty labeling of your products. This selection is NOT RECOMMENDED for orders with fewer than Five Whole Animals.
Please Note: Wholesale Custom orders are subject to certain restrictions based on the size of your order. Orders with 3-4 animals PER ORDER will incur a $50 wholesale custom entry fee for increased handling of your order. Orders with 2 hogs will incur an additional $100 and orders with a single hog will incur $150.
Choose this option if you:
- Are a farmer or retailer that needs precise control over how your order is processed, from nose to tail.
- Are bringing us multiple animals and need multiple processing techniques that deviate from our normal processes.
- Need to utilize our more time intensive services such as rendering fat into lard and making ready-to-eat products.
Terms/Conditions
Basic Fees
- Basic Slaughter Fees: $.31/lb on hanging carcass weight ($46.59 minimum per animal). Additional charge of $.08/lb on the hanging weight for heavy hogs over 350lbs live weight.
- Processing (includes standard vacuum packing!) – $.74/lb hanging carcass weight ($115 minimum per animal). Additional charge of $.08/lb on the hanging weight for heavy hogs over 350lbs live weight.
- Federal Inspection $19.97 (this fee helps maintain the facility to USDA standards).
- Smoked ham and hock options will be invoiced on the green weight, uncured weight, at $2.20/pound.
- Jowl and Belly bacon will be sliced and charged on the green weight at $3.50/pound.
- Offals are $7.99 per animal. If you would like offals packaged, we must know when the animal is dropped off. These are saved at time of slaughter, so please be sure your farmer lets us know if you would like any or all of these items.
- Freezer rental of $2.60/day (orders less than 14 boxes ONLY) is charged 7 days after notification of your fresh portion (unsmoked, etc) order. Orders that have 14 boxes or more are stored in our warehouse freezer on a pallet. Please note that you will be notified when your fresh (unsmoked) pork is completed, when your trim value added options (patties, special requests, etc) and again when your smoked meat is completed as they are essentially three separate orders. We do attempt to have value added options and smoked meat done at the same time. During our higher volume months, there may be some wait time. We do ask you pick up for each notification.
- Submissions after slaughter appointment and/or changes to the order after submission are subject to a $11 change order fee. Additional fees may apply in the event of unforeseen circumstances. We strive to work efficiently to keep the cost of your order as low as possible.
Disclaimers
- A 10% variance may occur from patties ordered versus patties made.
- Our sausages are as natural as possible ($.74/lb – our signature seasoning Farmer’s Mild Breakfast, $.94/lb – mild options, $1.33/lb – hot and specialty options). They leave out MSG and all preservatives possible. Natural sugars are used with the exception of the Sugar Free Garden Sage. Hint of Maple includes artificial maple flavor. A 10% variance may occur from pounds ordered versus pounds made.
- Boars, uncastrated males or males with a retained testicle, will not receive smoked meat.
- FOR WHOLESALE CUSTOM ONLY: Boxed patties have a minimum of two (2) boxes and the vacuum seal patties have a minimum of 25 pounds. (A 10% variance may occur from patties ordered versus patties made). Seasoned breakfast patties have a minimum of 50lbs. All cased products (brats and breakfast links) have a minimum of 50lbs.
- FOR WHOLESALE CUSTOM ONLY: A whole hog generally yields enough for two options. Grinding the ham(s) and/or shoulder(s), may be required for additional options. Our suggestion is to do 25 lbs of a seasoned sausage and the rest into an unseasoned ground on a whole hog. Please note that our process is designed to season 25lb increments of sausage. *Trim with less than 25 lbs will be made into unseasoned ground pork, but seasoning packets will be available for purchase when picking up the order.
