* For Lamb Chops

1 T olive oil
1 lemon zested and juiced
2 T fresh oregano
2 T minced garlic
1/2 t salt
1/4 t ground black pepper

Stir together ingredients, add to 6-8 lamb chops in sealable bag, coat well. Marinate for 1 hour and grill for best flavor.

* For Loin Roast/Leg of Lamb

1/4 C honey
2 T dijon mustard
2 T chopped fresh rosemary
1 t black pepper
1 t lemon zest
3 cloves garlic, minced

Combine all ingredients and marinate 3-5 lb. loin roast/leg of lamb for 8-12 hours. Bake @ 400 degrees for 1 hour or an internal temperature of 140 degrees F.
