This Old Farm Food Hub owner and president Jessica Smith, is very excited and honored that she was asked to present at the 5th NC Choices Carolina Meat Conference – the largest gathering of pastured meat producers in the country! Farmers, chefs, butchers, and industry leaders are coming together for this conference as a part of a growing community committed to advancing market opportunities and increasing customer access to pasture-based meats.
Jessica is presenting on Tuesday September 26th in the session: Lost in Translation: How to Speak Your Processor’s Language. This session will address the misunderstanding that stems from the processor and farmer speaking two languages – from meat vocabulary to understanding processor limitations and business needs. In this session participants will hear from farmers-turned-processors about what they wished they had known when they were farmers and what they know now as processors. Jessica is discussing cut sheets, examples, and general recommendations for farmers new to cutting meat.
Jessica invited Kristy Miller, our Farm to Market Assistant to accompany her to the Meat Conference to learn from a variety of topics featured on the schedule, and I look forward to sharing what she learned in the next newsletter.
