Roasted Lemon and Red Pepper Chicken Breast
Ingredients
2 Boneless Chicken Breast
2 tbsp. Sun Flower Oil
1 Red Pepper
1 Lemon
3 tbsp. Lemon Juice
1tsp Salt
1 tbsp. Black Pepper
½ tbsp. Garlic Powder
Instructions
Mix ¼ cup water and lemon juice in a bowl. Marinate the chicken breast for ½ hour in the fridge. Pat the chicken dry and brush liberally with the sun flower oil. Sprinkle the salt, black pepper, and garlic powder on the breasts. Slice the lemons into thin circles and lay about three on each breast. Place the rest in the pan around the chicken. Slice the red pepper into strips and lay them on the breasts and pan also. Bake for 20 to 30 minutes at 350 or until the chicken is done.
