What does Flanken-style mean?
Taken from the chuck primal part of the beef, the Flanken-style Short Ribs consist of the first five ribs of the ribcage. When the chuck short ribs are obtained by cutting across the bones, they are referred to as Flanken-style Short Ribs. However, chuck short ribs cut parallel to the bones are known as English style short ribs.

Ingredients
4 lbs. flanken ribs (on sale now at This Old Farm!)
2 tbsp. flour
salt and freshly ground pepper
2 tbsp. oil
4 cloves garlic
4 small white onions
3 carrots, quartered
1/2 green pepper, sliced
1 cu. dry red wine
Preparation
1. Preheat oven to 300″F. Wipe off ribs with paper towels, then sprinkle well with flour, salt, and pepper.
2. Heat oil in dutch oven, and first brown garlic, then push aside and brown flanken on all sides.
3. Remove from heat, add vegetables, and pour in wine. Cover pan and cook for about 2 1/2 hrs. Baste frequently and add more wine if sauce has evaporated.
Serving suggestion:
Serve with noodles, broccoli, and a good red wine.
