Jessica and Cindy traveled to Chicago to hear and participate in a presentation on the Illinois Grass-fed Value Chain Study done by Delta Institute and Pasture Project at the Wallace Center. It was a day of both promise and worry. The farmers in the room were educated and ready to take on the demands of a grass based operation. It was recognized through data that grass based operations are solid answers to environmental concerns like Nitrogen and Phosphorous run off and top soil loss. On the other hand, we were the only meat processor in the room that would participate in the case study out of over 50 processors asked pointing to the disconnect I see between processors and farmers today. Though they both rely on one another, they tend to speak different languages and respond to different needs. And while a market was present in the room, there was no data on engaging large buyers with contracts that would ensure farmers have markets for there products. It is hard to convince farmers to do the hard work of growing without a solid and growing market for their products. Despite these worries, we see farmers prevailing each week. We processed well over 1000 head of cattle in 2019, most of it from grass based operations. They may not finish on grass but they spend the majority of there happy cattle lives on grass.
