Now you may or may not laugh at the feet portion of this special, but there are those who take their feet very seriously. Chicken Feet can be used to make a premium chicken broth, and those who like their chicken broth can get very involved in their feet. Broth made with chicken feet is very high in Calcium. It is known to soothe cranky babies! Grandma did know best. For the simplest broth ever:
up to 4 lbs Chicken feet or a combination of Broiler Bones and Chicken Feet (Pasture raised will give the best flavor and nutritional content.)
Fill your 8 quart stock pot with water, 2 TBSP sea salt, 2 bay leaves, and 1 TBSP peppercorns, and the above mentioned chicken. (All kinds of veggie leftover can be added when making broth but I find that the flavor is wonderful with just this simple recipe) Bring to a boil and simmer on low for several hours. Strain through cheese clothe if you want a clear broth or just a spaghetti strainer if that doesn’t matter to you which is the case in my kitchen. Chuckle that you have chicken feet in your pot knowing that you now made the most nutritious, healing substance ever: chicken broth.
