Pork Tenderloin, also known as the “Catfish Loin” due to the shape of the cut being thick on one end and narrowing down to almost a point at the other end. This cut is similar to the fillet from beef in that it is the most tender cut from the hog. You can cook this cut whole or slice it into medallion steaks and grill them. However you cook it, it should be very tender!
